Instructions

  1. Make the thyme simple syrup: In a small saucepan over medium-high heat, combine the fresh thyme sprigs, sugar, and water. Bring the mixture to a boil, stirring occasionally to fully dissolve the sugar. Remove from heat, cover, and allow the syrup to steep for 30 minutes to infuse the thyme flavor. After steeping, strain out the thyme sprigs and let the syrup cool completely.
  2. Prepare the blackberry puree: In a blender or food processor, combine the blackberries, brandy, lemon juice, and black food coloring. Puree the mixture until completely smooth. Transfer the puree to the refrigerator to chill until ready to use in the cocktail.
