Description
These Bang Bang Chicken Skewers are a flavor explosion! Tender chicken thighs are marinated in a blend of spices, then grilled or air-fried to perfection and coated in a creamy, spicy, and tangy Bang Bang Sauce.

- 1 lb boneless, skinless chicken thighs, cubed into 1-inch pieces
- 1 tablespoon extra virgin olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 2 tablespoons hot honey (optional)
Bang Bang Sauce:
- 1 cup mayonnaise (more as needed)
- 2 tablespoons lime juice, fresh squeezed
- 2/3 cup Thai sweet chili sauce
- 1/4 cup Sriracha (use less or more as desired for heat level)
Instructions
- Marinate Chicken: In a large bowl, combine the cubed chicken thighs, oil, and seasonings. Toss to evenly coat the chicken well.
- Make Bang Bang Sauce: In a medium bowl, combine the mayonnaise, Thai sweet chili sauce, Sriracha, and lime juice. Mix well. This will make about 1.5 cups of Bang Bang Sauce.
- Prepare for Cooking: Working one skewer at a time, thread the chunks of chicken until about 1/2 – 3/4 of the skewer is filled. Pour half of the sauce into a separate bowl and set aside to use after the chicken has been cooked (for dipping and glazing!).
Grill Instructions:
- Grill Chicken: Thread the seasoned chicken onto the skewers. Brush the skewers with one of the portioned sauces. Grill over medium-high heat for 15-20 minutes, turning often or until the chicken reaches an internal temperature of 165°F.
- Baste and Serve: Turn the skewers often and continue to brush with sauce until it’s gone and the chicken is caramelized.
Air Fryer Instructions:
- Air Fry Chicken: Add the skewers to the basket of your air fryer in a single layer. (Depending on the size of the air fryer, you may have to work in batches.) Air fry at 400°F for 10-12 minutes, flipping halfway. Chicken will be fully cooked when it reaches an internal temperature of 165°F.
- Serve: Transfer the skewers to a plate and drizzle or brush with the reserved Bang Bang Sauce and a drizzle of hot honey (if using). Serve immediately.
Notes
- Chicken: You can also use boneless, skinless chicken breasts for this recipe. If using breasts, reduce the cooking time slightly.
- Hot Honey: Hot honey adds a delicious sweet and spicy kick to these skewers, but it’s optional.
- Sriracha: Adjust the amount of Sriracha to your preferred spice level.
- Make Ahead: You can marinate the chicken up to 24 hours in advance.
- Serving: Serve these skewers with rice, salad, or your favorite sides.
