These Baked Feta Potatoes are a simple and flavorful side dish that’s perfect for any occasion. Crispy roasted potatoes are tossed with creamy baked feta cheese, garlic, lemon, and fresh herbs.

- 1–2 large baking potatoes, cubed
- 1 (200g) block of feta cheese
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 head of garlic, top cut off
- 1 lemon, quartered
- 1 tablespoon honey
- 1/4 cup fresh basil leaves
Instructions
- Preheat and prep: Preheat oven to 390°F (200°C). Wash and cube potatoes.
- Combine ingredients: In a baking dish, toss potatoes with olive oil, thyme, oregano, salt, and pepper.
- Add feta and aromatics: Place feta in the center of the dish. Add garlic and lemon quarters. Drizzle with remaining olive oil.
- Bake: Bake for 45-55 minutes, or until potatoes are crispy and golden. Remove garlic after 35 minutes if browning too quickly.
- Mash garlic and combine: Squeeze roasted garlic cloves from their skins and mash. Stir mashed garlic, lemon juice, and basil into the potatoes and feta.
- Serve: Drizzle with honey and garnish with fresh basil.
Notes
- If potatoes are not cooked through after the allotted time, remove feta and continue roasting potatoes until tender.
- Cube potatoes into smaller pieces for even cooking.
